#13: Pizzelles

I’ve been looking forward to this weekend for a few months. My sister is in town and not only would we get to visit my grandma together, but this would be the first time she would meet Jimmy. We drove up to Cleveland yesterday and spent the afternoon hiking at Cuyahoga Valley National Park. And because we would be visiting Grandma this morning, we came back to Jim’s house to make pizzelles together. Pizzelle-making and wine makes for a great meet-the-boyfriend activity.

NOTE: Grandma made pizzelles every year at Christmas. Big, crispy pizzelles with powdered sugar (and if we were good, she’d make them WITHOUT anise, which tastes like the devil’s butthole.).

Beat 3 eggs together with 3/4 cups of sugar. Then mix in a stick of melted butter. Then – 1 tsp vanilla, 1-3/4 cups AP flour and 1/2 tsp baking powder. I would also encourage 1/2 tsp salt. That’s a fun idea. We split the batch and experimented with chocolate (just ok), pumpkin & cinnamon (B+) and smoked cheddar cheese (insanely good). The dough will be thick… Like thicker than you might expect. Put a tablespoon onto a heated, oiled pizzelles press and press that shit for about 40 seconds. Add powdered sugar if you want. Or make them into chicken lunchmeat sandwiches (Jim’s idea).

3.  Since it’s Christmas, I’ve been listening to This Christmas by Donny Hathaway as often as possible. Pizzelles + wine + Donny Hathaway. That’s a great afternoon!
