#15: Lemon Poppyseed Octopuses

I’ve been spending a lot of time lately thinking about what kind of bakery I would open if I ever won the Powerballs and I could just open a bakery that was only open whenever I felt like it.  Actual bakeries are hard work, but a bakery funded by my $1B Powerballs winnings would just be for fun.  And, I would serve ridiculous cookies like Lemon Poppyseed Octopuses.  I have a feeling that people would be really into these because 1 – they’re super cute and 2 – lemon poppyseed is always a winner.

I had this idea last year called Blenders & Suspenders.  It’s a juice and smoothie bar and all of the employees are cute bearded dudes who are shirtless but are all wearing suspenders.  So – the shirtless men are also going to be part of the bakery.

And, the music would all be 90’s rap and R&B.  On my way home from Cleveland tonight, I was listening to Notorious B.I.G. “Hypnotize”.  I think I might require all of my shirtless guys to sing that song at 3:00 every day because it’s such a good song!  Anyway – those are the thoughts I’ve had thus far about the bakery!  Here’s the recipe for Lemon Poppyseed Octopuses:

1 stick of room temp butter

1-1/4 cup powdered sugar

1 egg

1 tbsp freshly squeezed lemon juice

1 tsp lemon zest

1-1/2 cup flour

1/8 cup corn starch

1/4 tsp salt

1/4 tsp baking soda

1 heaping tsp poppyseeds

some back food coloring for the eyes and mouths

Mix everything together except for the poppyseeds and lemon jazz.  Take a small spoonful of the dough out and mix it with the black food coloring.  Add the poppyseeds and lemon jazz to the remaining dough.  Chill all the dough for a half hour.  Use your octopus cookie cutter to make the octopus shapes.  Make the faces and cook these guys at 350 for 10 minutes.

NOTE – I just Googled beard + shirtless + suspenders.  Good stuff there….
