#31: Sookie St. James’s Rocky Road Cookies

  Hi hi hi hi hi!

No shame – I really like the Gilmore Girls. I like the snappy dialogue and the occasional Bangles cameo.  I had a mini crush on Lorelei’s baby daddy Christopher even though he’s an Offspring fan. And I fucking love Sookie St. James. I just started watching it again and in season 1, Sookie made rocky road cookies to give to Rory to give to Dean (and if you want my dumb two cents, I wanted Tristain to come back around.  Dean, Jess and Logan were all scruds. Dean didn’t deserve those cookies!!!)

My stunner of a friend Elle came over last night to help me make these shits. I explained to her that these were Gilmore Girl cookies and she laid this amazing story on me. Elle grew up in Texas and attended the same modeling school as Alexis Bledel (Rory! Who ends up with the rocky road cookies!). AND! Elle says that she even saw Rory in the Houston House of Pies – a pie restaurant in Houston! Elle was verrrrry clear that she was eating french fries at this pie place (fries before pies, am I right?) but didn’t remember what kind of pie Alexis/Rory ordered. (I bet it was like Coconut Cream Pie). 

So back to the rocky road cookies. Holy moly toilet bowly – these are delicious. 

3 cups confectioners sugar

1/3 cuppa cocoa powder (reg)

1/3 cuppa Cocoa powder (dark)

3 egg whites

Big splash of vanilla 

1/4 tsp salt (but heap that shit)

1 cuppa semi sweet choco chips and 1 cuppa dark chips (really – it’s whatever chocolate you want. I like a little dark in there but just do whatever the hell you want here)

Handful of toasted, slivered almonds (if the sell by date is last December – they’re still probably OK to use….)

About 1-1/2 cuppa mini marshmallows

Mix the sugar, cocoa, egg whites, vanilla, choco chips and the maybe-expired almonds together. Put smashed-down blobs onto a cookie sheet and then put your marshmallows on top. Like 3-6 per cookie.  Then chill these shits for about 10 minutes. Give each chilled blob a wink or two. Preheat your oven to 350 and then cook these guys for about 12 minutes. Maybe 13. When they come out, take a fork and swirl the chocolate and marshmallows some for a fun and frisky Stars Hallow kind of look.
