#36: Washington Insta-Grahams

Hi! My sister moved to Seattle to take a job at REI about 4 years ago. On my first visit to her new house in West Seattle, I saw Bush Face.


I didn’t like that Rita moved so far away to a city where she didn’t know anyone (except for her huz and the dogs) but Bush Face was like “calm your tits, bro. I’m watching out for her”. Anywhom, she and the huz and the dogs are all moving back to cbus for big new things there and I’m over-the-moon excited about it. But, that’s far fewer trips to Seattle for me. So to celebrate, four years of Bush Face, porch slugs, pine trees, Admiral Bird biscuit sandwiches, paddle boarding, fish tacos, psychic barbershops & Alki Beach sunsets, here are these Washington Insta-graham Faces.

3/4 cuppa AP flour

1-3/4 cuppa whole grain/graham flour

1/4 cuppa brown sugar 

Heaper of a 1/2 tsp salt

1 tsp baking powder

1 stick chilled butter (we think it should be salted)

1 tsp molasses

2 tsp honey

3 tsp water 

Mix up your flours, sugar, salt and baking powder in a mixer. Add in small pieces of your chilled butter and keep that shit mixing, player! It’ll look like sand on a sandy beach on a cloudy day.  

Then add in the mix of the water, honey & molasses and keep mixing until it’s a slightly wetter sand.  Shape this into a ball and chill it for like an hour. In the hour you’re waiting, watch two episodes of Frasier.  (Because Seattle! Get it? Tossed salads & scrambled eggs all over your face).  Once your second Frasier is over, roll out your dough and cut it into what ever shapes. Use a fork to aerate the cookies and then cook those shits for 15 minutes at 350. Cool em and eat em. We jazzed ours up with peanut butter and strawberry jelly and Nutella and pistachio noses. And we’re going to take them on a hike tomorrow. Weeeeeeeeee! 

PS. Rita says she’ll miss her REI peeps a lot, especially one named Shevonne (spelling????). Hi Shevonne!
